So who likes to can their vegies from the gardin??? So far this year we have ut up 2 cases of canned pee's, 1 cace of canned bean's, 2 cases of pickled beets, 2 cases of carrots and 1.5 case of dill pickles. These are quarts cases with the kids growin it is the smallest jars we use now lol. tomorow we are going to can more pickled beats and some plain beats then it is on to taters. It sure takes alot of work now , but it realy makes dinner fast and eazy later, pluss it tastes way better than store bought.

We can alot of stuff. Veggies, fruit, jams and jellys, soups and salsa's, meat on occasion now too. Green beans didnt do good so we bought or bartered for alot of them. We only can taters in soups/stews we store the rest in the root cellars and a converted old chest freezer. If they freeze though they go bad quick once thawed so its a happy medium you have to hit with them. We bought more taters last year then we grew. Semi truck came thru from Green Giant from by Havana and they were selling taters for $5/50lb bag. Our taters this year are doing really good compared to last year.

Our beans didn't do very good here iether but they are still producin some any way, I realy like canned taters it makes dinner so fast, open the jar boil/fry/mash or what ever you want. Friends of ours have a huge root seller, it is an old 400 barrel tank turned on its side and burried in a hill side, they said we could store as much as we want there so we will probly stoe a bag feed bag or two there so we have some freash spuds too. BWM we can all sorts of meat it is great stuff, moose, deer, bear, goose, chicken and so on, it is all good canned.

We have several root cellars between our farm and another property. One is a cinder block front that covers a rectangular cave at our farm. Its about 20x20. We've debated on covering the front with dirt too and just leaving the front door as it will still freeze due to the cinder block front. Plus the cinder blocks are a little obvious. Worse case scenario this "cellar" might be depended upon for a temporary shelter for us also. I encourage everyone around here to dig at least one for protection from tornado's if for no other reason. Meats a relative new thing for us to can. Wifes aunt can's almost all their food/produce as they have limited power and only one small freezer(they actually live in a cave). Any fish they dont cook fresh they can or pickle. The taters store good too in a back corner of the old barn. We buried an old chest freezer about 3/4 deep. Plastic bread flats stacked in it we can fit 2 side by side and 14 deep(we cut them down). We drilled a hole thru the lid and put a 1/2" PVC thru it for moisture to evaporate and to let a little air in. We buried the hole mess late November last year and opened it the first time in mid Febuary. We didnt cover the lid with enough dirt and straw so the top layer of taters froze. We lost about 3/4 or so of those on the top or about 1and1/2 5 gallon buckets. As they thawed they turned to mush and had an odor. I guess it was from freezing anyhow? We've got 3 more chest freezers to bury and setup this way this year. I want to try some onions, turnips and yams the same way this year. We usualy just hang onions in bunch's from the barn rafters but they get in the way at times. We also started raising feeder calves this year and have 5 now but are hoping to feed out 5 to 10 more so we need all the barn space plus we're keeping hay in the loft now so the cellar/storage freezers are going outside.

backwoodsman,back when i was a little fellow i remember a big mound of sand in the basement my folks would bury all the carrots in the sand pile for the winter. The neighbor had a ice house it had high walls 12 or 16 feet the ground floor was dug out quite deep,It had no windows They used to shovel the building full of snow. And i believe the ice lasted all summer and fall as far as i can remember
