How is every one doin at gettin stocked up for winter. We are workin at it here. We finished cannin the beans 3 cases, pickled beats 3 cases, carrots 2 casespees 1 case. We butchers 22 meat birds the other day but still have 23 more plus 6 turkeys to do. I hope to get some time and go get our moose soon too. Oh ya and we still have about 85 hills of spuds to put up, we are going to can alot of them too. We even tryed cannin dill pickles this year, they turned out prity good too. What have you fellas bean puttin up??? I am always lookin for new things to try and new ideas too?

LOL, Fuzz, since you said that you did dill pickles it kind of jarred my memory back to the year I had more jalapenos than I knew what to do with. I canned them in a bread and butter pickle brine and they turned out fantastic= sweet heat. I have never had another mess of peppers like that since.

I sliced them and then canned them. To serve them we would dump the jar over a block of cream cheese on a plate and eat em with crackers. Great appetizer kind of thing with a beer or glass of wine.

Good idea Mohawk and Im not a real big pepper fan. We've got our freezers ready for the taters. They arent working freezers we just use them for winter storage of taters. We messed up last year and lost about 2/3's or so of the top layer but were going to insulate better this year. We dont can taters as it seems they do better just stored for us. We've got home canned veggie soup finished up too. Most of our stuff is frozen as far as squash etc. Heres a tip though I just learned a few years ago. Jarred food from the grocery store jars can be reused one time after emptying. We've got alot of people saving them for us and they were a godsend for jams and jellies this year. We had to buy very few lids for the pint size jelly jars. 90% of our jellies and jams are in store bought recycled jars this year. Just boil the lids and jars like you do Ball etc and they reseal fine. But its a one time deal. They wont or we cant figure out how to use them a 2nd time. We've got a nice supple of fish for the winter also frozen. 5 feeder calves which at least 4 will be freezer bound in late November and a good supply of laying hens and meat chickens. I know it sounds dumb but I never knew till not too long ago you didnt need roosters for egg production as long as you dont want chicks so all the roosters cept 2 went to the freezer. Always thought the eggs were viable and the fridge "killed" them and the roosters "excited" the hens for egg production. So there ya go future homesteaders you wont have to get embarassed to ask I just bit the bullet for ya, lol. Tomatoes were a flop and the few we canned went into veggie soup. In the past we canned alot of them for various things but not too many were produced this year and we barely kept enough for eating fresh. I dont know how many taters weve got planted. We can buy them cheap off the truck though and probably cheaper then growing them ourselves truth be known but they are fun and rather easy till digging time I think? We've canned pickles of all kinds over the years. Wifes kin can fish and meat also. We've got cases of home canned goods stored here and at the retreat/farm/other house but if I get a chance I'll count them. We bought alot of cheap store canned goods too and got a deal at our local DOT foods outlet store on no.10 cans of veggies, soups, pasta's etc. Does, fawns and button bucks will hopefully grace our meat pole in abundance. We've got several new spots to hunt that antlerless deer are the only legal quarry.

Don't be to hard on your self BWM I thought the same thing for the first 2 years I had chickens, once I found this little tid bit out all my roosters jumped right into cannin jars lol.
